Now come on: what could possibly be better than aged port and chocolate?

Well… how about chocolate with port?

Less washing of glasses. Fingers to lick. All good!

Check out the hand-crafted chocolate bars from Mink. Hand made in small batches in Vancouver. No additives to extend shelf-life, so you also have the perfect excuse to eat the whole bar in one sitting if you have no willpower. Not cheap at $6.25… but then, nothing of quality ever is.

Here’s a recipe for the most wicked ganache ever:

For the base: 50 grams unsalted melted butter, mixed with a packet of smashed-to-smithereens digestive biscuits; you can use Amaretti biscuits, if you dig that marzipan flavour.
Squash the biscuits and butter with hand and then pack into a 20cm pie dish, pushing and spreading, until edges of the dish are met and there’s a wall around the circumference. You might want to place foil beneath, makes it easy to lift out at the end.

For the filling: melt 500 grams of 70% cocoa chocolate with 400 mils single cream. Do at a very low heat, stirring continuously until it’s a smooth mixture. Then add two tots of sambuca. You can use whisky, I do, but sambuca extracts the flavour of chocolate, and you won’t taste the sambuca itself. Give the mixture a quick stir, making sure the booze is evenly distributed, take off the heat and pour into the base. Wait for it to cool and then cover and put in the fridge overnight or, if you’re in a hurry, in the freezer for three to four hours. Take it out about half and hour before serving, and serve with double thick or clotted cream. Call ambulance.
